Sheet Pan Flank Steak and Vegetables

I am a major steak eater. I love steak even more than my husband does. I thought, rather than heating up the grill, I should try cooking some steak in my oven.

We threw in some vegetables, seasoned everything and cooked it to perfection.  We will definitely be making this recipe again.

I love using a dry rub on steaks and this one was so flavorful.

How to make sheet pan flank steak and vegetables

Step 1: Preheat oven to 400 degrees F.

Step 2: Spray a baking sheet with nonstick cooking spray.

Step 3: Toss broccoli florets and red potatoes in olive oil and spread in an even layer on prepared pan. If you don't have olive oil, you could also use avocado oil.

Step 4: Bake for 20 minutes and remove from oven.

Step 5: Combine salt, pepper, paprika, onion powder, garlic powder, oregano and cumin in a small mixing bowl. Set aside 1 teaspoon of seasoning mix. This will be the dry rub for the steak and the seasoning you set aside will be for the vegetables.

Step 6: Rub remaining seasonings on both sides of the flank steak.

Step 7: Move vegetables to the edges of the sheet pan and place seasoned steak in the middle of the pan.

Step 8: Sprinkle reserved seasoning over vegetables.

Step 9: Set oven to high broil. Cook steak and vegetables in broiler for 5-7 minutes, remove from oven, flip steak and broil for 5-7 more minutes or until steak reaches desired doneness.

Step 10: Cut steak into slices and serve with vegetables.

I was a little nervous about the meat drying out, but when we sliced into it it was nice and juicy. We cooked ours longer than I would have liked, but I didn't want it to be too rare for my kiddos.

Depending on how you like your steak, you may have to adjust cooking time. I like my steak medium and this was perfect. It was a little more than medium, but it was so juicy and full of flavor.

Any vegetable will work for this recipe

You can pick almost any vegetable to go with this recipe. If you aren't a fan of broccoli and potatoes, you could also do carrots, zucchini, sweet potatoes, onion, asparagus, etc.

If you have picky eaters that only like certain vegetables, you could easily switch them out for your favorites. This is your dinner, and you know your kids, but we love the seasoning with the broccoli and potatoes.
